Makes about 8 small pancakes, depending on size
You will need:
- 1 cup rolled oats
- 3 egg whites
- ¼ cup Almond milk or any other milk you use
- 6 oz. (one box) Raspberries
- 1/4 tsp. sea salt
- 1 tsp. Baking powder
- Tbsp. coconut oil melted
- Warmed maple syrup (optional)
Add all ingredients, excepted 2oz. of the berries and the maple syrup in a high speed blender and blend until smooth, if you feel like it is too runny or too thick add more oats or milk. The mixture will be very pink.
Heat a pan on medium. Pour a little coconut oil into the pan; allow to warm for a minute. Add the batter into pan in your desired pancake size, I like to make mine real small, its fun to eat that way and also great to pack as a snack.
Cook until bubbles form. Flip and cook a couple more minutes.
I like to serve them with a little warm pure maple syrup and the other 2oz or fresh Raspberries on top.
