Most lists of "super foods" don't include beetroot juice, but maybe they should. Think of beets as red spinach. They are one of the best sources folate, potassium, Vitamin C, as well as nitrates. They help with blood flow and help lower your blood pressure.
Beet juice may also help your stamina when you exercise.
We almost always have a jar of Pesto in out fridge.
You can use it for everything, mix it into a salad dressing, on a sandwich, on your veggies or grains and of cause on your pasta.
I make it in very many different ways, I mix up the nuts or greens and you can come u with amazing combos.

Just mix everything, but the olive oil in a food processor or in a bowl and use a Immersion blender. Slowly add the olive oil till the pesto has perfect consistency.

Pre-heat the oven to 350F. Mix all ingredients (but the sticky part) in a bowl and mix well. Now heat up the coconut oil in a pan and add the other sticky ingredients. Make sure they are all combined and then pour the mixture over the oat. Make sure everything coated equal. Transfer granola onto two sheet pans lined with parchment paper and bake for about 10 minutes, then stir it up and bake for another 10, till golden brown. If you like your Granola crunchy use the back of a big spoon to press the granola down while cooling, that way you get chunky crunchy pieces.
