Serves two

You will need:

  • Juicer
  • 1 apple
  • 3 beets and their greens
  • 4 carrots
  • 1 bunch of kale

Thoroughly wash all ingredients, if you use organic produce, no need to peel.  Cut into smaller pieces and Juice.

You will need:

  • 1 cup rolled oats 
  • 3 egg whites 
  • ¼ cup Almond milk or any other milk you use
  • 6 oz. (one box) Raspberries 
  • 1/4 tsp. sea salt  
  • 1 tsp.  Baking powder 
  • Tbsp. coconut oil melted
  • Warmed maple syrup (optional)

You will need:

  • Juicer
  • 1 Bunch of Beets
  • Beets greens and stems

Thoroughly wash all ingredients, if you use organic produce, no need to peel.  Cut into smaller pieces. Juice first the greens and stems, then the beets.

 

enjoy immediately!

Facts:

Most lists of "super foods" don't include beetroot juice, but maybe they should. Think of beets as red spinach. They are one of the best sources folate, potassium, Vitamin C, as well as nitrates. They help with blood flow and help lower your blood pressure.

Beet juice may also help your stamina when you exercise.

Pesto Lovers

Pesto Lovers

You will need: 

  • About 4 oz of Basil
  • 2 hands of wild arugula
  • ½ -1 cup Olive oil
  • ½ cup Pine nuts
  • ½ raw walnuts
  • Juice of a lemon
  • Dash of salt and pepper
  • ½ cup Parmesan

We almost always have a jar of Pesto in out fridge.

You can use it for everything, mix it into a salad dressing, on a sandwich, on your veggies or grains and of cause on your pasta.

I make it in very many different ways, I mix up the nuts or greens and you can come u with amazing combos.

Just have fun with this, there are no limits.

Just mix everything, but the olive oil in a food processor or in a bowl and use a Immersion blender. Slowly add the olive oil till the pesto has perfect consistency.

Some like it thick, some like it more runny.

Keep in a jar or container in the fridge, poor some olive oil over the top. The oil will act  like a seal and that way will keep for up to 2 month.

Minted Pineapple

You need:

  • 1 Pineapple 
  • 1 bunch of mint 
  • ¼ cup Pure Maple syrup 

Cut up the pineapple, place into a bowl.  Chop the mint (just the leafs) ,add them to the pineapple and pour the maple syrup to the mixture, mix well.  Place into the fridge and serve cold.

Real nice with Greek yogurt or some whipping cream.

Yogurt and Herb Dip

Yogurt and Herb Dip

You will need:

  • 6oz Whole milk Greek yogurt 
  • 2 tbsp. of chopped dill
  • 2 tbsp. of chopped parsley 
  • 2 tbsp. of chopped chives 
  • Drizzle of extra virgin olive oil 
  • Squeeze of lemon juice from half a lemon
  • Salt and Pepper 
  • You can also add some chopped tomatoes 

 

Place all the ingredients in a small bowl. Stir until well combined. Adjust seasonings to taste. 

I like to cut up all kinds of in season vegetables and serve with the dip. 

It’s also a very nice snack for kids.

Everything Granola

Everything Granola

You wil need:

  • 3 cups Rolled Oats 
  • 1 cup Puffed Millet 
  • ½ cup Whole Millet 
  • ½ cup Raw Sunflower seeds
  • ½ cup Raw Pumpkin seeds 
  • 1/3 cup flex seeds 
  • ½ cup slivered raw Almonds 
  • 2 Tablespoons raw Cacao powder
  • 1 Tablespoon Chia meal 

For the sticky part:

  • 1 cup Agave nectar 
  • 2 tablespoon Coconut oil (in solid)
  • 1 tablespoon Maple syrup 
  • 2 teaspoon Vanilla extract 

Pre-heat the oven to 350F.  Mix all ingredients (but the sticky part) in a bowl and mix well.  Now heat up the coconut oil in a pan and add the other sticky ingredients.  Make sure they are all combined and then pour the mixture over the oat.  Make sure everything coated equal. Transfer granola onto two sheet pans lined with parchment paper and bake for about 10 minutes, then stir it up and bake for another 10, till golden brown.   If you like your Granola crunchy use the back of a big spoon to press the granola down while cooling, that way you get chunky crunchy pieces.

  • 1-2 bunches of parsley
  • 2 Tbsp lemon juice
  • 1 bunch Dino kale
  • 1 cucumber
  • 2 handfuls of Spinach
  • 1 cup pineapple
  • 1 pear

Thoroughly wash all ingredients, if you use organic produce, no need to peel.  Cut into smaller pieces and Juice.

Enjoy immediately!
